One potato, two potatoes, three potatoes, four. Five potatoes,
six potatoes, seven potatoes more. You say potayta, I say potat-
ta. Meat and potatoes. Hamburgers and french fries. Mr.
Potato head. What is your favourite taterism? If you're one of
those rare, rare birds that totally hate potatoes in every way,
shape or form, I ask you—why? They are the chameleons of
the vegetable world, they adapt to whatever they're put with.
Always content to take the backseat as far as flavour goes, a
potato doesn’t ask for much than salt most of the time. Heck,
you could leave one alone in the dark for a few months and
then find you've gotten yourself a nice, new houseplant.
Mashed, hashed, boiled, baked and fried, spuds are the char-
acter actors of the plate stage, deserving of far more than just
gravy. Hic. Oh yesh, they're also used in making vodka.

Potato Soup

Ingredients:

Peeled, rinsed, quartered potatoes

Any other rinsed and chopped vegetables you like—
E.g. celery, onions, carrots,

Cauliflower, broccoli, peas, beans, corn, mushrooms.
Salt and pepper

Can of cream of mushroom soup

Put the vegetables, salt, and pepper into a pot and
cover with water. Simmer until the vegetables are soft.
Remove from heat. Here's the fun part. Using your
handy, dandy potato masher, mush everything up. Add
the can of soup and mix. Return pot over heat and
simmer. Voila.
