No I know that seeing so many * 5 mushrooms (sliced) ,é '
ingredients may look a little * 3 cloves of garlic (minced) iby
intimidating—but trust me, this soup is * 1tsp ginger (grated or minced) a
super easy to make. It’s also great for meal + 2tbsp sriracha 1 i
prep since it freezes really nicely. + 1jalapefio with seeds (sliced) dl i 7s
Basically, all you have to do is toss all * 2cups vegetable broth
the veggies together in a pot. This means * 1can of coconut milk ie
all the bell peppers, onions, mushrooms, * 1/2 cup cream el
and jalapenos. Add in the garlic, sriracha, (don’t add this if you want it to be vegan) 7 ee
ginger, broth, coconut milk, brown sugar, * 1tbsp brown sugar en
and soy sauce. + 1tbsp soy sauce
Bring this to a boil, and then put a + 2 tbsp lime juice

lid partway over the pot, with enough of a * 3 green onions (chopped)
gap for the steam to vent. Reduce the heat
to about medium and let it cook for1o
minutes. By the end the veggies should bea
little crispy, but slightly wilted.

Remove from the heat, then stir in the
cream and lime juice.

Garnish with a sprinkling of chopped
green onions. You can also garnish it with
cilantro—if you don’t find it absolutely
disgusting like I do.
